By The Slice, Gluten-Free Bread is my new discovery and now, my favorite thing to make. Being gluten-free I really don’t eat much bread anymore, unless I’m the one making it. With this year being so busy with planning my daughter’s wedding I haven’t had as much time in the kitchen as I would like to, so I came up with this quick two-minute slice of bread! Yes, it took me a total of 3 minutes to get out the ingredients, mix it up, and throw it in the microwave – TADA – that’s all it took. Yay! That’s a recipe I can get behind!
First, get all your ingredients ready:
1 – Egg
1 Tbsp. – Coconut Oil – melted – or oil of choice
½ tsp. – Pure Vanilla
3 Tbsp. – Almond Flour – I use medium grind for this recipe
1 Tbsp. – Coconut Flour
½ tsp. – Baking Powder
1 squirt – Liquid Stevia – optional
Pinch of Salt – Optional
Plastic – microwave safe – lid to a sandwich container
First Step – Mix egg, oil and vanilla in a small bowl.
Second Step – Mix in almond flour, coconut flour, baking powder and salt, until well blended.
Third Step – Pour batter into a microwave safe sandwich container and throw it in the microwave for 2 minutes. Remove and allow to cool.
4th Step – Slice in half – then you have 2 slices.
5th Step – Toast and add your own delicious toppings or use to make your favorite sandwich.
This By The Slice Gluten-Free Bread is so versatile. You can change it up and add other seasonings, nuts, raisins, cinnamon or replace the almond flour for flax-seed for a totally different taste (if you are adding raisins, make sure to add extra points for the Keto Diet)! This recipe base can be made in so many different ways. I am really loving it, seriously loving it! Make up a large batch in a mason jar with the flours, baking powder, and salt. Store in your cupboard for when you want a quick sandwich. Add one-fourth of a cup of the flour mixture to a small bowl, add your liquid ingredients and in a flash, you will have a delicious sandwich using my, By The Slice Gluten-Free Bread recipe without being in the kitchen all day, waiting for your bread to bake!
