Pecan Chocolate Coconut Chews are a delicious little bite without all the quilt. Well, without “most” of the quilt. I like to think of these as my special treat to share with others.
Not everyone is crazy about coconut and my husband is one of those that really don’t care for it mixed in anything. If he eats coconut it’s the raw ones. He likes to crack them open and generously gives me the coconut water from inside. Personally, I think that’s the best part. These Pecan Chocolate Coconut Chews we made with unsweetened organic coconut flakes you find in the bag at your local grocery. You can’t always find fresh coconuts here in Maine during the winter and if you do, odds are it’s not that good.
When I made these Pecan Chocolate Coconut Chews the grandchildren were here and totally scarfed (when this happens, move out of the way or you could be missing a limb if you get in the way) them down. At this point my husband kept avoiding them when asked if he would like one, but all it took was our grandson making fun of him and sure enough, off he went to grab a few. Well, guess what? He loved them and went back for seconds and thirds! Hmmm, I told him he would love them if he just tried one. So, should I say – I told you so or just leave this one be? Yep, you guess it, I left it be and just smiled and walked away and took my plate of Pecan Chocolate Coconut Chews.
These Pecan Chocolate Coconut Chews are a great alternative to the overly sweet treat. These delicious bites are loaded with just a few ingredients, which make them very easy and quick to make.
- 1 cup – Sweetened Condensed milk – I like to use the fat-free, but you can use regular is you would like.
- ½ cup – Raw Pecans - crushed
- 1 cup – Semi-Sweet Ghirardelli Dark Chocolate Chips
- 1 – 7oz bag – Organic Unsweetened Coconut Flakes
- Cookie Sheet lined with parchment paper or spray with non-stick spray
- Preheat oven to 350 degrees.
- Mix all ingredients in a large bowl.
- Scoop mixture up with a small scoop or use a tablespoon to scoop cookies on to sheet pan.
- Bake for 10 minutes until the out edges just start to turn brown.
- Cool and serve. Enjoy!
