Yum, Fried Broccoli Cheddar Rice Balls! These are just simply delicious and now are a favorite of mine to make. A few days ago, I made Broccoli Cheddar Rice for me and the hubby for dinner and I had left-overs (I make enough for an army) and I decided to create something delightful from the left-overs. Guess What? I did create something delightful – these Fried Broccoli Cheddar Rice Balls.

While I was creating these Fried Broccoli Cheddar Rice Balls my husband was in the kitchen watching every step. He says he wants to know how to make them so he can try to. I just love it when he or one of the grandchildren to be in the kitchen while I’m baking and cooking up something delicious. I love the company and the extra hands to help. Although, my husband has his hands mainly in the dish water washing up the dishes. I know, I have a wonderful husband and believe me, I’m hanging on to this gem. He is a wonderful help and he says his payment is scrumptious food. Whew, I’m glad I don’t have to pay him per dish washed!

Fried Broccoli Cheddar Rice Balls

Fried Broccoli Cheddar Rice Balls

These Fried Broccoli Cheddar Rice Balls are going to be the hit for your game day half-time party! You’ll be the goal winner with these delightful and fun bites of goodness.

Ingredients

    ~~Rice~~
  • 2 cups – Left-over Broccoli Cheddar Rice – or you could use a package mix, make sure it’s gluten-free first.
  • ½ cup – Cheddar Cheese – grated
  • ¼ cup – Coconut Oil
  • 3 Tbsp. – Parmesan Cheese – grated
  • ½ cup – Gluten-Free Bread Crumbs – for rolling rice balls in
  • 2 – Eggs – beaten
  • 1 cup – Gluten-Free Bread Crumbs
  • ~~Spicy Mayo Dip~~
  • 3 Tbsp. – Mayo – low fat
  • ¼ cup – Sour Cream – low fat
  • ¼ cup – Greek Yogurt – plain, low fat
  • 1 Tbsp. – Siracha Sauce
  • Salt and Pepper to taste.
  • ~~Broccoli Cheddar Rice Balls~~
  • 2 cups – Left-over Broccoli Cheddar Rice* – or you can use a gluten-free package, just fix according to directions on package.
  • ½ cup – Cheddar Cheese – grated
  • ¼ cup – Coconut Oil
  • 3 Tbsp. – Parmesan Cheese – grated
  • ~~Spicy Mayo~~
  • ¼ cup – Greek Yogurt – non-fat plain
  • ¼ cup – Sour Cream – non-fat
  • 2 Tbsp. – Sriracha Sauce – or hot sauce of your choice

Instructions

  1. In large bowl combine with spoon broccoli cheddar rice, cheddar cheese, parmesan cheese. With hands roll rice mixture into 2 inch balls.
  2. Place beaten eggs in a small bowl and bread crumbs in another small bowl. Coat each rice ball in eggs, then roll in bread crumbs.
  3. Heat coconut oil in medium skillet on med heat. Fry each rice ball 2 minutes on each side. Remove to paper towel to drain excess oil.
  4. Mix all ingredients for spicy mayo together and serve with Fried Broccoli Cheddar Rice Balls.

Notes

*I used my left-over Broccoli Cheddar Rice for this recipe. If you do not have left-overs or did not make the Broccoli Cheddar Rice, you can use a gluten-free broccoli cheddar rice instead. Fix rice package according to directions and go from there.

These Fried Broccoli Cheddar Rice Balls are especially delicious with the spicy mayo dip that goes really well with the crunchy coating on the outside. They’re wonderful to serve up as an appetizer for your favorite game day. I’m thinking of making them again for Super Bowl Sunday coming up in February. They’ll be even more delicious if our team goes to the Super Bowl. If your team doesn’t win, you can serve these up to the opposing team lovers in your house. One bite and they keep eating and won’t be able to brag that they won! Keep the peace with a mouthful of these delicious Fried Broccoli Cheddar Rice Balls.
