There is no better way to warm the soul than with a dish of this delightful Crock Pot Beef Roast. If you close your eyes and focus, I bet you can smell it cooking right now! You can smell the roast cooking with fresh baby carrots, wedge potatoes and a sweet onion all cooking at the same time. Sometimes it’s the simple things in life like this Crock Pot Beef Roast that can put a smile on your face, even on the saddest of days.
I really enjoy using my crock pot or slow cooker, as some call it. Many years ago when I worked at a so called “real Job”, but I think working from home is now my “real job” because it’s way more fun! I used to use a crock pot all the time due, to time I didn’t have. I didn’t have much time at home because I worked 10 and 12 hour days, and it was hard for me to come home and try to cook up a complete meal and still have time for the kids, homework and the husband. This Crock Pot Beef Roast became one of our favorites. I used to fix it at least once a week.
Crock Pot Beef Roast is comfort food for the soul. There's nothing like coming home after a long day at work and walking into the house with the aroma of a home slow cooked meal. All you have to do is dish it up and you're ready for this delightful tasty Crock Pot Beef Roast.
- 4 to 5 lb – Beef Roast
- 2 Tbsp. – Weber Steak Seasoning*
- 5 medium – Potatoes – washed and sliced in wedges
- 1 package – Baby Carrots – organic
- 1 medium – Red Onion – peeled and roughly chopped
- ½ cup – Veggie Stock**
- 1 tsp of each – Salt, Pepper
- Heat crock pot on low.
- Season beef roast with weber seasoning and place in crock pot.
- Slice potatoes, and onions. Add them along with the carrots on top of the roast.
- Add salt and pepper and then the veggie stock! Cover and cook on low for 8 to 10 hours and serve!
*Always read the labels to make sure your seasoning is gluten-free. Webber carries an array of gluten-free seasoning and they are my favorite. **Again, read all labels because some veggie stock has wheat consume. I really like Rachel Ray’s Stocks, they are certified gluten-free.
Since I’ve been home I’ve kind of steered away from the crock pot/slow cooker meals, that is until recently. I found my favorite thing to do when I have extra time where I’m not stuck in the kitchen is to crochet! Now that I’ve started back into one pot meals a few times a month, I have plenty of time to do the things that I enjoy doing. Right now I’m working on a layette set (blanket, dress, hat, sweater) for my soon to be great niece. I’m so excited! While cooking my Crock Pot Roast Beef I was able to get the dress and hat done, and now I’m working on the blanket! Yes, I will post the pattern and where I found it on the blog once it’s done!
Crock Pot Beef Roast is a one pot complete meal! You don’t have to worry about all the extra time in making potatoes and vegetables. It’s all done in one swoop! You can’t ask for anything better than that! So when your busy schedule keeps you going for most of the waking day hours, be sure to start up your crock pot/slow cooker before you leave the house and when you get home you will have a mouth-watering, aromatic, and delicious meal waiting for you to dish it up!
