This recipe for Chicken Lettuce Cups are one of my favorite memories. It’s made with fresh Florida oranges from my hometown of Arcadia, Florida. My father sends me a crate each year during the winter. I can’t wait to receive his flavorful gift and as soon as the shipment arrives, I close my eyes and inhale the fragrance one of the oranges and I feel as if I’m standing in my backyard again.

It’s that time of year again and these Football Sunday Black Bean Salsa Wraps on going to be on the menu through the sports season! Not only are these super easy and quick to make, but they are seriously delicious. These can be made to take on the run, as a quick lunch or dinner throughout the week, or at any time when you’re pressed for time and want something healthy for your family.

This Pecan Walnut Chicken Salad is one of my husband’s favorite sandwiches! He loves the combination of the chicken, pecans and red grapes, he says it’s like taking a bite of everything you love at the same time. He also says it’s a manly sandwich and that was good enough for me! It’s one of my most requested meals form him.

This Salad In A Jar recipe is one of my personal favorites. I’m able to have a weeks worth of Salads made that are easy to grab at any time of the day and for any meal. They’re great for taking to work as well. All you have to do is give the jar a shake and pull our your fork and begin eating. The best part is the jars can be reused as many times as you like, and there’s nothing to throw away. Your not only saving the environment, but money on throw away containers.

Now this Taco Tuesday Salad is definitely a family favorite is the praise goes to my grandson Mason who loves food theme lunches and dinners. He’s tagged most of the week with meals. He loves Monday mash (Shepard’s Pie), Taco Tuesday’s, Wednesday’s Wok (stir fried veggies), and so on. He’s just too funny! This Taco Tuesday Salad is really simple to make and will fill you family up and keep them fueled for what the day has ahead of them.

This Gluten-Free Lunch Collection can be served for lunch, dinner or on the weekends. They’re great for family gatherings or as take-a-long meals for work or school. The best part is you really don’t have to worry about spend a lot of time in the kitchen. These can be made up ahead of time and then you just grab and go! Enjoy!

  2. I would make all these recipes my son has Celiacs disease and I’m always looking for new recipes to make for him to enjoy .

  3. I really liked the Salads in the the jar, great for taking to work or school. I have a granddaughter that loves salads and this would be great for her. The Pecan Walnut Chicken Salad is a must try.
