This Creamy Chocolate Cheesecake came about because my grandson needed a pie for school last Monday for National Pie Day. In his excited and ever exuberant voice he’s telling me all about this wonderful upcoming day and in his satellite class (when I went to school it was called homeroom) they are allowed to bring in a few different pies for class that morning and he wanted a chocolate one. Of course, me being me, I said sure I’ll make one, what day next week do you need it – I should have known – he got a little sheepish on the phone and said tomorrow morning at 8 am! What, you’re kidding me – so off I went at 8 pm Sunday night and mixed up this delicious Creamy Chocolate Cheesecake for my sweet little man who waits until the last minute so I can do the “Grammie Scramble”.

Sunday nights in our little town roll up the streets at about 6 pm and no stores are open, so I had to play this one by what ingredients I had on hand – thank goodness I love to cook and I usually have a stocked cupboard for emergencies like this one. Oh, but I didn’t tell him that. I did tell him he owed his Grammie one for pulling a Creamy Chocolate Cheesecake out of her magic kitchen. *wink* I can’t help but love each and every one of my grandchildren, things like this are want memories are made of. He will always remember me doing the “Grammie Scramble” and he will have nothing but a big smile when he explains what that is. All of them say I do the flight of the Grammie, running around the kitchen in a flash of light scrambling in the cupboards and making the impossible possible. No wonder I love them! They all say your Grammie; you can do it.

Creamy Chocolate Cheesecake

The wonderfully delicious Creamy Chocolate Cheesecake is a dessert maker! We feel in love with the creamy chocolate flavor. Top with your favorite whipped cream or ice cream and you will be the hit of the night.

Ingredients

    ~~Cheese Filling~~
  • 2 8 oz packages – Cream Cheese – room temperature
  • 1 cup – Greek Yogurt – low fat, plain
  • 1 tsp – Pure Vanilla
  • ½ cup – Sugar
  • ½ cup – Cocoa Powder
  • ¼ cup – Chocolate Fudge Sauce
  • 1 8oz container – Cool Whip – I used sugar free, it’s what I had on hand
  • ~~Crust~~
  • 1 ¼ Cups – Almonds – raw
  • ¼ cup – Sugar
  • 1 Tbsp. – Cocoa Powder
  • 4 Tbsp. – Coconut Oil – melted
  • ½ tsp – Carmel Flavoring
  • ~~Topping~~
  • 1 cup – Heavy Cream
  • 1 tsp – Pure Vanilla
  • 2 Tbsp. – Sugar
  • Pipping Bag
  • Chocolate Shavings to sprinkle

Instructions

    ~~Crust~~
  1. Add almonds, sugar, cocoa powder, coconut oil, and flavoring to food processor and pulse until almond are nice and crumbly. Press into pie pan and refrigerate until needed.
  2. ~~Cheese Filling~~
  3. With hand mixer blend cream cheese, yogurt, vanilla, sugar, cocoa powder, and fudge sauce until nice and creamy. Add cool whip and blend with mixer until combined. Spread into pie plate with almond crust and return to refrigerator until needed.
  4. ~~Topping~~
  5. 1 cup – Heavy Cream
  6. 1/2 tsp – Pure Vanilla
  7. 2 Tbsp. – Sugar
  8. With mixer whip heavy cream for 1 minute, add vanilla and sugar and continue whipping until stiff peaks form, about 3 minutes. Put whipped cream into a pipping bag and pipe entire top of pie and sprinkle shaved chocolate on top. Refrigerate until firm – about an hour before serving.
  9. Slice and serve. Store pie in refrigerator.

This quick and easy Creamy Chocolate Cheesecake is a simple no-bake with a delicious raw almond crust that takes no time at all to put together – it’s really that simple! The almond crust is my favorite part of this decadent dessert, its raw almonds crushed up with coconut oil and a little bit of sugar and is simply amazing. I doubled my recipe when I made it so I could have one here at home for my husband. There is no way a Creamy Chocolate Cheesecake would make it out of my house alive if I only made one. Grandchildren or not – either I make two or nobody gets one! I so love my family, they keep me on my toes and full of love.
