These Chicken Lettuce Cups are a fresh taste of Spring. What a way to bring on the warmer weather, unless of course you live here in Maine and your weather is still cold outside and if so, then these are a great way to make you think spring. A lot of you already know that I receive a wonderful gift from my father each year of delicious fresh handpicked oranges from Florida and I love finding different ways to use them. These Chicken Lettuce Cups are just one of many recipes I’ve come up with using these delicious oranges that have passed the family “recipe inspection”.

Oranges are a favorite fruit around this house and the more things I can use them in the better! My husband’s one of my biggest fans for eating these Chicken Lettuce Cups, not only do they taste delicious but they’re healthier for you too. Now that’s and extra added benefit with spring coming and summer soon to follow there’s nothing like a light meal that’s satisfying at them same time. The Grandchildren love to have theirs on crackers an afternoon snack when they come over here off the bus for the evening. Chicken Lettuce Cups are fast becoming a regular staple to have on hand for a fast and easy meal on the go!

Chicken Lettuce Cups

Chicken Lettuce Cups

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 3.5 cups

Serving Size: 1/4 cup

Chicken Lettuce Cups

In a medium bowl combine all ingredients except for romaine lettuce leaves, mixing well. Scoop chicken salad into lettuce leaves and serve with a few slices of fresh oranges.

Ingredients

  • 2 cups – Cubed Chicken*
  • 1 – Florida Orange**- peeled, sectioned and chopped
  • ¼ cup – Frozen Peas – thawed
  • ¼ cup – Red Onion – chopped
  • ½ cup – Green Bell Pepper – chopped
  • 1 tsp – Orange Zest
  • 1 Tbsp. – Orange Juice
  • ¼ cup – Lite Mayo
  • ¼ cup – Greek Yogurt
  • ¼ tsp – Salt – or to taste
  • ¼ tsp – Pepper – or to taste
  • Romaine Lettuce Leaves

Instructions

  1. In a medium bowl combine all ingredients except for romaine lettuce leaves, mixing well.
  2. Scoop chicken salad into lettuce leaves and serve with a few slices of fresh oranges.

Notes

*I love to use a pre-roasted chicken from our local market, it makes this a quick and easy recipe to make or you can boil up some chicken breast (10 min) and cubed them once their done. **If Florida oranges are not available you can use what your market has on hand.

These delicious Chicken Lettuce Cups are great for lunch or dinner and will keep you on the healthier side of things.
