Quick and Easy Potato Egg Baskets are a great way to start off your family meal. These tasty little creations make a wonderful breakfast that will fuel up your family and keep them going all morning. I wanted something to make that was quick and easy for my husband and I before we heading out for a long day of shopping. Where we live there isn’t very many choices for restaurants that offer tasty gluten-free options. I have to say these delicious Quick and Easy Potato Egg Baskets kept up going for the entire morning until lunch time.

You get all of your favorite items in one bite. How delicious is that! All I did was use some pre-cooked bacon, sausage and potatoes! It’s really that easy. Your family will think your spent most of your time in the kitchen preparing these tasty bites. The outside crunch of the potatoes, the spiciness of the sausage, the crunch of the bacon that’s sprinkled on top, and the creamy center of the egg yolk is one heck of a scrumptious bite. I can’t wait to make these for my grandchildren, they’re going to love them.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 4 muffin cups

Serving Size: 1 muffin cup

Quick and Easy Potato Egg Baskets

Next time you’re headed out or not, get your family going with the Quick and Easy Potato Egg Baskets and start the day of running (shopping), and keep everyone fueled up. Husband’s especially enjoy shopping on a full belly.

Ingredients

  • 2 links – Jones All Natural Sausage Links – fully cooked, sliced thinly
  • 2 cups – Already Cooked Simply Potatoes – reheated and smashed
  • 4 – Eggs
  • Salt and Pepper – to taste
  • Cooking Spray
  • 2 slices – Bacon* - chopped small for topping

Instructions

  1. Preheat oven to 350 degrees, spray bottom of muffin pan.
  2. Spread a ¼ cup mashed potatoes onto bottom and sides of 4 muffin cups. Layer with sliced sausage and bake for 5 minutes. Remove from oven.
  3. Crack egg on top of potato mixture in the 4 muffin cups, add salt and pepper, return to oven and bake for 8 to 10 minutes until egg white is done.
  4. Remove from oven and allow to cool for a few minutes before removing. Top with bacon bits and serve.

*I use the already cooked brand for quick recipes.

Next time when I make these Quick and Easy Potato Egg Bakes I think I’ll layer in some baby spinach and some crushed red peppers on top of the spinach layer to add some extra flavor. Yummy! My husband enjoyed his with a nice thick slice of homemade toasted bread along with his and said it completed his breakfast. No bread for me, it’s was just as delicious without.
