Gluten-Free Chocolate Chip Cookies, yum! I love a good chocolate chip cookie with a hot cup of tea to round my day off. There’s nothing like sitting in a nice quiet area (which doesn’t happen much around here) enjoying your first bite, among many of a warm from the oven Gluten-Free Chocolate Chip Cookies, that is until all of the grandchildren come running through the door wanting their share with a tall cold glass of milk! I think they can smell them baking all the way across town. For just a second I was enjoying the peace and quiet, but what’s life if it doesn’t include family and noise, and with these Gluten-Free Chocolate Chip Cookies the volume is going to go up in your house.
My grandchildren are my biggest fans and love just about everything that comes out of my kitchen, with just a few exceptions – they don’t like beets. Their bright shining faces are truly what keeps be in there cooking and baking at all hours of the day, especially for their classrooms at school. This past holiday I put out one hundred and fifty cookies and forty eight tasty brownies, and that was just for the schools. I was one busy Grammie! Then it was back to the kitchen to do my regular holiday gift giving baking list. I love every minute of it.
These wonderful Gluten-Free Chocolate Chip Cookies are a delicious treat warm right out of the oven with a nice tall glass of cold milk! Spread some smiles in your house tonight.

- ½ cup – Coconut Oil
- ¼ cup – Sugar
- ½ cup – Brown Sugar
- 1 tsp – Pure Vanilla
- 1 egg – beaten
- ½ cup – Gluten-Free Flour*
- ½ cup – Gluten-Free Oat Flour*
- ½ tsp – Baking Soda
- ½ tsp – Baking Powder
- 1 cup – Ghirardelli Bittersweet Chocolate Chips
- In a small bowl combine – flours, baking soda, and baking powder with a whisk. Set aside until needed.
- Cream together with mixture – coconut oil, sugars, egg, and vanilla, until smooth.
- Combine flour mixture into wet mixture using a wooden spoon. Stir in chocolate chips.
- Scoop batter by rounded tablespoon onto lined cookie sheet. Bake at 350 degrees for 12 – 15 minutes.
*For this recipe I used Bob's Red Mills Gluten-free flours.
