I love to have a couple warm chewy Peanut Butter Cookies right out of the oven with a nice hot cup of tea! It’s among one of my many indulgences. They’re especially good when they’re made by little hands helping in the kitchen. My granddaughter Patience (yes, I’ve said it before, you will need patience with this little ball of energy) loves to get her hands right into the bowl and scoop the dough out with her fingers and start rolling them in small balls to put on the pan. She’s just way too cute and loaded with ants in her pants while doing so. She will actually dance from one end of the counter to the other while rolling these up. Her favorite part is putting in the fork marks before these they go into the oven.
Peanut Butter Cookies are her favorite cookies to make and to eat. We both stand by the oven waiting to grab that first warm cookie right off the baking sheet! Once they’ve cooled she’ll divide them up for after school snacks and make a special pile for her brothers while doing so. She is always thinking of them no matter what she’s doing. It’s wonderful to see the excitement and love in her eyes she has for her family and I’m lucky enough to be a part of that. She’s such a smart cookie for only being seven. Oh, and did I mention to you, she talks the whole entire time! Yes, she does, and does she have a lot to say.
Peanut Butter Cookies are a warm delicious bite of love! Spread the love around your table and getting some memories flowing.
- 1 ¼ cup – Gluten-Free Flour*
- 1 ¼ cup – Oat Flour*
- 1 tsp – Baking Soda
- 1 tsp – Baking Powder
- 1 cup – Peanut Butter
- 1 cup – Brown Sugar
- 1 cup – White Sugar
- 1 ½ tsp – Pure Vanilla
- 2 – Eggs
- 1 cup – Coconut Oil
- In a small bowl combine flours, baking powder, and baking soda with a whisk. Set aside until needed.
- In a large bowl with mixer combine peanut butter, sugars, vanilla, and coconut oil. Beat in eggs one at a time.
- Add flour mixture to peanut butter mixture with a wooden spoon. Using hands roll batter into small balls and place on lined cookie sheet. Flatten each cookie with a fork in two different directions (crosswise) on top of each cookie ball.
- Bake 350 degrees for 12 to 14 minutes.
*My favorite to use is Bob’s Red Mills. I have a double oven so my time goes quick, add additional baking time for 3 dozen is you have a single oven.
