Spinach Salad with Blackberry Vinaigrette dressing is one of my favorite dishes to have on a summer day. The light fresh taste of the combined ingredients is just wonderful. The baby spinach, strawberries, blueberries, and some other surprising ingredients, is like putting a fresh garden of sunshine into your body. I’m all about those greens, and I truly do eat them every day for lunch. My husband is not a big fan of greens, but he will chomp down one of these super salads (as I call them), with no complaints, and go back for more.
I can even get my grandchildren to eat this wonderful Spinach Salad with Blackberry Vinaigrette dressing by having them help me clean the strawberries and blueberries, and cubing up a little cheddar cheese (which they love), and getting it ready to toss into a bowl. Getting those children/grandchildren involved in the making of what they’re going to eat pretty much insures they’re going to enjoy it. They even eat the thinly sliced onions I’ve included. Yes, I’m patting myself on the back for that one! I love to sneak in foods they claim not to eat, and I smile the entire time they’re cleaning their plate!
Spinach Salad with Blackberry Vinaigrette is a wonderful fresh tasting lunch to have on those hot summer days. Fill your family up with some healthy fuel and keep them running on full all day.
- 1 Bag – Baby Spinach – rinsed and drained well
- ½ - Red Onion – sliced very thin
- 3 TBS – Cheddar Cheese – cubed
- 1 – Tomato – diced
- ¼ Cup – Fresh Blueberries – rinsed and drained well
- ¼ Cup – Fresh Strawberries – rinsed and drained well
- 2 TBS – Olive Oil
- 1 TBS – Balsamic Vinegar
- 1 TBS – Blackberry Jam*
- ½ tsp – Lemon Zest
- Salt and Pepper to taste
- Combine spinach, onion, cheese, tomato, blueberries, and strawberries in a larger bowl. Toss well.
- Whisk together olive oil, balsamic vinegar, blackberry jam, lemon zest, and seasoning, until well combined. Pour over salad and serve.
*I use Polaner Seedless Blackberry Jam Sugar Free, but you can use any jam or your choice. I personally love the flavor of Polaner.
With summer here and school out on vacation, adding some healthy greens, and fresh fruit into your family’s diet will help fuel them through a fun packed day of swimming, hiking, bike riding, or playing at the park! It’s all about fun for them, and all about keeping them healthy for us. So grab that bag of spinach, or change it up and add a little baby kale to the mix, to serve up some good healthy fuel.
